Do you find yourself eye-balling the bistro boxes when waiting in line for your Latte at Starbucks? Or stopping at WaWa to grab a quick “snack lunch” on your way to work because you slept through your alarm and didn’t have time to make your own lunch? Meal prep during the week sometimes falls to the waste side when our lives get super busy and hectic (the norm, right?!). Coincidentally, SO many women I work with do NOT eat enough during the day and find themselves overeating and mindlessly grazing the second they get home from work until they lay down for bed.
Don’t worry – I’ve got you covered! Below are my three FAVORITE, simple DIY Bento-Box lunches that will help you easily eat enough during the day to prevent late night overeating and grazing, and keep you energized to push through your work day!
#1
1 single serve guacamole
2 hard-boiled eggs
1 oz. whole wheat crackers
1 red bell pepper sliced
1 oz. chocolate
#2
2 oz. single serve hummus
1 oz. almonds
2 oz. sliced turkey deli meat
½ oz. whole wheat crackers
10 cucumber coins
1 full fat mozzarella string cheese
#3
2 tbsp. peanut butter
½ apple sliced (coat with lemon juice to prevent browning)
1 oz. cheese cubes
Diced chicken (I use Trader Joes prepared grilled chicken strips and dice them myself)
